Dark Choc Coconut Ube Brownies

Chocolate? Yum! Coconut? Yes! Sweet purple Yams? Definitely! Trust us—these easy-to-make Dark Chocolate Coconut Ube Brownies are beyond your delicious dreams.

INGREDIENTS (Makes 12):

  • ½ Cup butter
  • 4 oz. milk chocolate
  • ¾ Cup sugar
  • ¼ Cup brown sugar
  • 3 eggs
  • 1 Tsp. vanilla paste
  • ½ Tsp. ube extract
  • ¼ Cup ube frozen
  • ¼ Tsp.  salt
  • ½ C up all-purpose flour
  • 8 oz. cream cheese
  • ¼ Tsp. Ube extract
  • 1 Bag Niagara Toasted Coconut Dark Chocolate Clusters and Bars

Directions

  • STEP 1:

    Preheat the oven to 350*.
  • STEP 2:

    Grease 8×8 baking pan.
  • STEP 3:

    Brown the butter. Heat butter over medium heat until it melts. Then lower the heat to low and cook until brown bits appear.
  • STEP 4:

    Put the chocolate into a bowl. Pour the browned butter over the top. Stir until all the chocolate melts. Set aside.
  • STEP 5:

    Combine sugar, brown sugar, eggs, vanilla extract, ube extract, ube halaya jam, and salt in a large bowl or the bowl of a stand mixer. Using a stand mixer, whisk until fluffy, 5-10 minutes.
  • STEP 6:

    Add the chocolate mixture to the wet ingredients.
  • STEP 7:

    Add the flour and gently fold it into the mixture.
  • STEP 8:

    Pour the batter into the prepared baking pan.Bake for 40 minutes.
  • STEP 9:

    Mix the cream cheese and 1/4 tsp Ube extract and frost the brownie before portioning it.
  • STEP 10:

    Chop Niagara Chocolates Toasted Coconut Clusters and sprinkle over portioned brownies.
  • STEP 11:

    Cut into slices and enjoy!
