Coconut DragonFruit Truffles

Coconut DragonFruit Truffles—made with Niagara Coconut Milk Chocolate Clusters—are a delightfully tasty treat with a punch of bright pink to welcome spring! See the recipe below.

  • 3 cup shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup coconut cream
  • 1/4 cup honey
  • 1 Tbl dragon fruit powder
  • 1 cup Niagara dark chocolate bar, chopped
  • 1 tsp coconut oil
  • 1 bag Niagara Coconut Clusters, chopped coarsely

  • STEP 1:

    Combine shredded coconut, melted coconut oil, honey, coconut cream and dragon fruit powder in a bowl.
  • STEP 2:

    Roll into bite-sized balls (about 2 tablespoons) and place in the fridge to chill.
  • STEP 3:

    Melt chocolate and remaining coconut oil in a heatproof bowl over a double boiler, stir gently until melted and combined.
  • STEP 4:

    Remove truffles from fridge and line a sheet pan with parchment paper.
  • STEP 5:

    Using a fork for easy removal, plunge truffle in melted chocolate and remove and allow to drip to remove any excess chocolate.
  • STEP 6:

    Quickly drop into the Niagara Coconut Clusters and roll until completely covered.
  • STEP 7:

    Complete the remaining truffles.
