Lava Chili Pepper Cookies

  • 1 ½ cups Niagara Chocolate Lovers’ Mini Cups, chopped
  • 1.7 oz. butter
  • 1 cup all-purpose flour
  • ½ tsp. baking powder
  • 1 tbsp. cocoa powder
  • 1 Tsp. ground cinnamon
  • ¼ Tsp. salt
  • 2 large eggs
  • ½ cup sugar
  • 2-4 (medium hot) fresh red chili, finely chopped


  • STEP 1:

    Preheat oven to 350°F
  • STEP 2:

    Line two baking sheets with parchment paper and set aside.
  • STEP 3:

    Chop chili (finely) and set aside.
  • STEP 4:

    Chop Niagara Chocolate Lovers’ Mini Cups, (coarsely)—set aside ⅓ for later and melt the rest with the butter in the microwave for a thick chocolate sauce. Set aside to cool.
  • STEP 5:

    In a small bowl, mix flour, baking powder, cocoa, cinnamon, and salt and set aside.
  • STEP 6:

    In a large bowl mix eggs and sugar on high speed until light and fluffy – about 2-3 minutes. Add melted chocolate and mix in well.
  • STEP 7:

    Add flour mixture and combine but don’t over-mix.
  • STEP 8:

    Fold in the chopped chocolate and chili.
  • STEP 9:

    Dough should be soft. Take a spoon or cookie scoop to place 14-16 portions of dough on baking sheets – leaving some space for spread.
  • STEP 10:

    Bake for 10-12 minutes and let cool down before transferring to the cooling rack.
  • STEP 11:

    Once cooled completely—eat and enjoy!
