Peanut Butter Smores Muffin

We love to create delicious summer memories with a new twist on a classic treat like s'mores! Simply use Niagara Peanut Butter Bars and make some Peanut Butter Muffin Smores using the recipe below.


  • 1 cup graham crackers, finely crushed
  • 1 oz confectioners sugar
  • 3 oz butter, unsalted, melted
  • 6 jumbo marshmallows, cut in half
  • 1 each Niagara Peanut Butter Bar, cut into 12 pieces

  • STEP 1:

    Preheat oven to 350*F
  • STEP 2:

    Place graham crackers in food processor and pulse until finely crushed—about 2 minutes.
  • STEP 3:

    Add sugar and pulse a few times to incorporate.
  • STEP 4:

    Transfer to a bowl and stir in butter.
  • STEP 5:

    Lightly spray muffin tin (12) and divide crumbled crust evenly to each tin.
  • STEP 6:

    Press mixture down firmly, until sides begin to form a cup.
  • STEP 7:

    Bake for approximately 5 minutes or until crust is golden brown.
  • STEP 8:

    Cool completely before removing.
  • STEP 9:

    Place ½ marshmallow in each cup and broil on top rack of oven for 1-2 minutes.
  • STEP 10:

    Immediately add chocolate pieces to each marshmallow when they are removed from the oven.
  • STEP 11:

    Serve and enjoy with loved ones!
